Holidays always remind me of fresh baking. Whether it’s the smell throughout the house while I bake, or the thoughtful gift someone has given me. What a perfect way to enjoy the holidays.

I have learned that for a recipe to work for me, the easier the better. This one has never failed me. **Only issue is it contains peanut butter, but it could be replaced with an alternative.
Peanut Butter Rice Krispie Treats
- 4 tbsp salted butter
- 10 ounce bag mini marshmallows
- ½ cup creamy peanut butter
- ½ tsp vanilla extract
- 6 cups Rice Krispies
Instructions
- Spray a 9x9” casserole dish with non-stick cooking spray, or line with parchment paper
- In a large sauce pan/pot, melt the butter on low heat
- When melted keep the heat on low and add marshmallows
- When they begin to soften and melt, add peanut butter
- Constantly stir so everything evenly melts (Roughly 2 minutes)
- Turn off heat and remove from stove
- Stir in vanilla extract
- Add in Rice Krispies until evenly coated
- Pour mixture into casserole dish (it will look loose). Spray hand with nonstick cooking spray and pat down the mixture.
- Allow 30-45 minutes to set, then slice into bars.
